Irish cheeses for Christmas

So the Irish times^H^H^H^H^H^H^Hno, Fionn sent me an RTE article on suggested cheeseboard and we had some nice cheesy boards over christmas. With fruits and assorted chutneys or jams. Yummy.

We at least had crozier blue(sheep), St Tola's ash(goats), Gubeen and a cheddar(unpasteurised cows). Yum.

Ingredients
200g (7oz) packet Cooleeney (soft moulded creamy cheese)
190g (7oz) carton Ardsallagh soft goat's cheese
275g (10oz) wedge mature cheddar cheese, such as hegarty's
250g (9oz) wedge crozier blue
